Ingredients

  • 6 chicken drumsticks skin-on and bone-in for maximum flavor

  • 4 large potatoes cut into thick fries

  • 1 tomato cut into wedges
  • 1/2 red onion sliced into rings
  • 1/2 cup mayonnaise for the dip base
  • 2 tablespoons ketchup adds tanginess
  • 1 teaspoon hot sauce adjust to your heat preference

Instructions

  • Make the spice rub: In a small bowl, combine paprika, garlic powder, onion powder, salt, black pepper, and chili powder.
  • Season the drumsticks: Pat the chicken dry with paper towels, then coat each drumstick with the olive oil and lemon juice, ensuring they're evenly coated.
  • Apply the seasoning: Generously sprinkle the spice rub over all sides of the drumsticks, rubbing it in gently so the flavors adhere.
  • Let them rest: Set the seasoned drumsticks aside for at least 10 minutes to allow the flavors to penetrate the meat.
  • Prepare the fries: Cut potatoes into thick fries, toss with olive oil and salt, spread on a baking sheet, and bake at 400 degrees Fahrenheit for 25-30 minutes, flipping halfway through, until golden and crispy on the outside and tender inside.
  • Preheat the grill: Heat your grill to medium-high heat, around 375 degrees Fahrenheit, and lightly oil the grates to prevent sticking.
  • Grill the drumsticks: Place the seasoned drumsticks on the grill and cook for 12-15 minutes on the first side without moving them, allowing a nice char to develop.
  • Flip and continue: Turn the drumsticks over and grill for another 12-15 minutes on the second side until the internal temperature reaches 165 degrees Fahrenheit and the skin is golden and crispy.
  • Rest the chicken: Remove the drumsticks from the grill and let them rest for 3-5 minutes before serving to retain the juices.
  • Arrange the salad: Place a bed of fresh lettuce on your plate or serving platter, then top with cucumber slices, tomato wedges, and red onion rings.
  • Add the protein: Place the grilled drumsticks beside the salad, showcasing their golden, crispy skin.
  • Pile on the fries: Arrange the crispy fries on the plate, seasoning with a pinch of salt if desired.
  • Serve the dip: In a small bowl, whisk together the mayonnaise, ketchup, and hot sauce for a creamy, tangy dipping sauce perfect for both the fries and the chicken.
