Garlic Herb Lamb Chops & Crispy Potatoes

Ingredients

  • 6 lamb chops about 1 to 1.5 inches thick
  • 4 tablespoons olive oil divided, 2 for lamb and 2 for potatoes
  • 3 garlic cloves minced
  • 1 teaspoon paprika
  • 1 teaspoon dried rosemary or 1 tablespoon fresh if available
  • 1 teaspoon dried thyme or 1 tablespoon fresh if available
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 6 medium potatoes cut into wedges and patted dry
  • 1 cup lettuce
  • 1 cucumber sliced
  • 1 cup cherry tomatoes halved
  • 1 red onion sliced

Instructions

  • Mix the herb marinade: In a small bowl, combine the minced garlic, paprika, dried rosemary, dried thyme, salt, and black pepper with 2 tablespoons of olive oil, stirring until you have a fragrant paste.
  • Season the lamb: Pat the lamb chops dry with paper towels, then generously coat both sides with the herb mixture, pressing gently so the seasonings adhere. Let them sit at room temperature for 10 minutes while you prepare the potatoes.
  • Prepare potatoes using oven method: Toss your prepared potato wedges with 2 tablespoons of olive oil, salt, and pepper, then spread them on a baking sheet. Bake at 425°F for 25 to 30 minutes, stirring halfway through, until golden and crispy on the edges.
  • Sear the lamb: Heat a large skillet over medium-high heat until it's very hot but not smoking. Carefully place the lamb chops in the pan and sear for 3 to 4 minutes on the first side without moving them, then flip and cook for another 3 to 4 minutes for medium-rare.
  • Rest the lamb: Transfer the cooked lamb chops to a warm plate and let rest for 5 minutes.
  • Arrange the base: If desired, create a simple bed of fresh lettuce on your serving plates.
  • Place the lamb: Position the rested lamb chops on the plate, leaning them slightly against one another for visual appeal.
  • Add the potatoes: Nestle the crispy potato wedges alongside the lamb chops.
  • Garnish and serve: Top with fresh herb garnish if using, add cucumber slices, halved cherry tomatoes, and sliced red onion around the plate for color and freshness, then serve immediately with lemon wedges on the side.
