Ingredients

  • 1 pound sirloin steak cut into bite-sized cubes
  • 4 large potatoes russet potatoes work best for crispy fries
  • 2 tablespoons butter unsalted for the steak sauce
  • 2 garlic cloves minced
  • 2 tablespoons olive oil 1 tablespoon for the steak, 1 for the fries
  • 1/2 cup grated Parmesan cheese freshly grated if possible for best results
  • 1 tablespoon fresh parsley chopped for garnish
  • 1 teaspoon salt divided between steak and fries
  • 1/2 teaspoon black pepper freshly ground
  • 1/2 teaspoon paprika adds a subtle smoky depth
  • Optional toppings red pepper flakes, fresh rosemary or thyme, lemon zest, or additional Parmesan

Instructions

  • Cube the Steak: Cut your sirloin into bite-sized cubes, roughly 1.5 inches each. Pat them dry with paper towels to ensure proper browning.
  • Season Generously: In a small bowl, combine salt, black pepper, and paprika. Coat all steak pieces evenly with this seasoning mixture.
  • Heat Your Pan: Place a large skillet over medium-high heat and add 1 tablespoon of olive oil. Wait about 2 minutes until the oil shimmers.
  • Brown the Steak: Working in batches to avoid crowding, add the steak cubes to the hot pan and cook undisturbed for 3-4 minutes per side until a golden crust forms. Transfer to a plate.
  • Make the Garlic Butter Sauce: In the same skillet, reduce heat to medium and add 2 tablespoons butter. Once melted, add minced garlic and cook for 1-2 minutes until fragrant. Return the steak to the pan, toss to coat in the sauce, and cook for another 1-2 minutes.
  • Prepare the Fries: While the steak cooks, cut potatoes into fries and choose your cooking method. For oven method: toss with 1 tablespoon olive oil and salt, spread on a baking sheet, and bake at 425 degrees Fahrenheit for 20-25 minutes, stirring halfway through.
  • Finish the Fries: Remove from oven and sprinkle with Parmesan cheese, then bake for another 3-5 minutes until golden and crispy.
  • Arrange the Fries: Place a generous portion of hot Parmesan fries on each plate or serving platter.
  • Top with Steak Bites: Spoon the garlic butter steak cubes and all their savory pan sauce over the fries.
  • Garnish and Serve: Sprinkle fresh chopped parsley over the top for color and freshness. Add extra Parmesan if desired, and serve immediately while hot.
